I know it’s almost 20 minutes long, but this is worth your time. Dan Barber gives you an entertaining overview of his experience with an extremely sustainable way to raise fin fish in Spain. I’d love to know more about the economics of the operation and how they manage their financial sustainability alongside their ecological responsibilities. If they are half as good at the financial side as they are with the environmental aspects, they may be an excellent model to follow!
